[zydis] fix find_package (#27667) ...

* Fix zydis find_package

Zydis currently nests the config.cmake files in zydis/zydis which is
then skipped by find_package(zydis CONFIG REQUIRED)

closes https://github.com/zyantific/zydis/issues/388
